Bob's season - it's time to start! If you like both Beans and pistachios, this recipe will definitely steal your heart! The combination of pasta with tender Beans, crunchy pistachios, creamy sauce and aromatic parmesan is definitely a must-have this season!
Difficulty level: easy
Number of servings: 2
Preparation time: 30 minutes
Ingredients:
For pistachio paste:
- 50 g peeled pistachios
- 3-4 tablespoons cream 36%
For pasta products:
- 200 g of beans
- 250 g of your favorite pasta
- 2 garlic cloves, finely chopped
- 250 ml cream 36%
- 2 tablespoons finely grated parmesan cheese + garnish
- 2 tablespoons olive oil
- grated lemon zest
- sea salt and black pepper to taste
Preparation:
1. In a medium saucepan, bring the salted pasta water to a boil.
2. Cook the Bean* you will find a description of how to do it best at the bottom of the recipe
3. Mix pistachios with olive oil, with a little cream. Do not use all the cream from the recipe, as you will need it in the next step!
4. In a large skillet, heat 2 tablespoons of olive oil, add the minced garlic and cook for 1-2 minutes until golden brown.
5. Add the cooked pistachio paste and remaining cream and cook for another 3-4 minutes.
6. In the sauce, grate a little lemon zest, sprinkle with parmesan cheese and add the cooked Bean.
7. Prepare the pasta according to the instructions on the package.
8. Just before the cooking time runs out, scoop a ladleful of water out of the cooked pasta and add it to the rest of the ingredients in the pan to make a loose, creamy sauce.
9. Season to taste with salt and pepper. Using tongs, add the strained pasta to the sauce and stir, adding a little water from the pasta if necessary.
10. Place the pasta in separate bowls and sprinkle with the chopped pistachios and grated parmesan cheese. Ready!
* How to cook a Bean?
Place the Bean washed under running water in a saucepan and cover with water (water should be twice as much as the Bean!). Add a flat teaspoon of sugar to the water. When the water boils, add a pinch of salt and cook, covered, over medium heat for about 15-20 minutes (until the beans are soft and the skin is not wrinkled).
